You know it’s a special time of year at my house when Vavó (Grandmother) busts out the sweet rice! So deliciously creamy and sweet, it’s the perfect ending to any meal!
After, yet another, delicious family meal, my Vavó (Grandmother) would put us to work and have each of us pass the bowl of sugar and beaten egg around to get it to the right consistency she was after. This recipe is a bit simpler in the fact that you don’t have to break your arms off while making it (you’re welcome). My favorite part about helping with this one is the cinnamon garnish on top. Such a lovely touch!
Enjoy this warm or even chilled – it’s the best either way. The lemon is such a refreshing addition! Tip: make sure to make enough to share with the whole family like we always did 😊
Portuguese Sweet Rice (Arroz Doce)
Ingredients:
1 cup Short Grain Rice
2 cups Water
2 Cups Hot Milk
1 cup Sugar
2 Egg Yolks
1 Lemon Rind (about 2 inches)
1 tablespoon Butter
1 teaspoon Vanilla
Pinch of Salt
Ground Cinnamon, for garnish
Step 1:
Cook rice with salt according to the package instructions.
Step 2:
Add hot milk, sugar, butter, vanilla, egg yolks, and lemon rinds to the cooked rice and stir to combine. Simmer for 15-20 minutes covered, until you reach an oatmeal consistency.
Step 3:
Divide rice pudding into dishes and let cool. Garnish with cinnamon. Enjoy!
